ancho short rib street tacos
Ingredients
⦁ 6 dried ancho chiles
⦁ 2 table spoons minced garlic
⦁ 1/2 cup diced onion
⦁ 1/3 cup brown sugar
⦁ 4 tablespoons tomato paste
⦁ 2 teaspoons balsamic vinegar
⦁ 1 cup water
⦁ 1 teaspoon cumin
⦁ 1 teaspoon chili powder
⦁ 1 teaspoon each salt and pepper
⦁ 4 pounds beef short ribs
⦁ 1 tablespoon olive oil

Directions
deseed ancho chilis.Soak in hot water until soft, Drain. Put chiles to a blender. Add the onion,tomato paste, garlic, brown sugar, balsamic vinegar,water,cumin, chili powder, 1 teaspoon salt and 1 teaspoon pepper. Puree until smooth.
Heat the oil in a skillet over medium heat until hot. Brown the ribs on each side.add ribs to a glass bakeing dish ( with a cover)
Pour the sauce over the ribs,cook covered at 350 degree for 3 hours.
Remove from oven and let sit for a half hour till cool debone the ribs shred the meat into a large bowl. Skim the fat off the top of the sauce and reheat sauce till reduced by half put shredded meat back into sauce heat 5 more mins then serve the short ribs on grilled warm tortillas, top with fresh diced onions, fresh cilantro and cotija cheese

ALE STEAMED MUSSELS
Ingredients

⦁ 1 cup chopped tomato
⦁ 1 cup four peaks hop knot beer( or any IPA )
⦁ 1 cup chicken broth
⦁ 1/4 cup chopped fresh parsley
⦁ 2 table spoons butter
⦁ 2 tablespoons fresh lemon juice
⦁ 1 tablespoon minced garlic
⦁ 2 pounds green lip mussels, cleaned and debearded (about 40 mussels)
⦁ 1 loaf French baguette sliced and spread with minced fresh garlic, parmesan and olive oil and toast in a 350 degree oven till crispy and browned
⦁ Preparation
⦁ Combine first 7 ingredients in shallow stock pot and bring to a boil, cook till reduced by half, then add mussels; cover and cook 4 minutes or until shells open. Remove from heat; discard any unopened shells.
⦁ Serve with toasted garlic bread
