**Washing your eggs can actually push bacteria through the shell.**
Itβs a common question, especially when you learn that a single eggshell has up to 17,000 tiny pores! Because eggshells are so porous, washing them at home is actually a food safety hazard and increases the risk of contamination. Water in your sink can easily push surface bacteria right into the egg.
Here is the breakdown of the eggs in your fridge:
π USDA-Graded Eggs: There's no need to wash them! The USDA grading program ensures these eggs are safely and professionally cleaned under strict guidelines before they ever reach your carton.
How are they cleaned?
The Warm Water Rule: USDA regulations require eggs to be washed in water that is at least 90Β°F and exactly 20Β°F warmer than the internal temperature of the egg itself. This precise temperature difference makes the inside of the egg expand slightly, which naturally "pushes" dirt and bacteria away from the pores so water isn't absorbed!
The Wash & Rinse: Instead of soaking in a pool of water, commercial eggs get a continuous, warm shower. They are gently brushed clean using a mild, food-safe wash and then given a final protective rinse to ensure they are completely safe for your kitchen. Finally, they are completely dried off before heading into your carton.
π©βπΎ Farmers Market Eggs: Don't wash these either! Eggs straight from the farm have a naturally protective layer (called the bloom) that seals the pores and blocks bacteria.
Whether your eggs come from the grocery store, an Arizona producer, or a small farm stand, washing them in your kitchen does more harm than good.
