Cookies and Cream Cinnamon Rolls ๐ช๐ฅฎ
Ingredients:
Dough:
2 1/4 tsp active dry yeast
1 cup warm milk (110ยฐF/45ยฐC)
1/3 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
4 1/2 cups all-purpose flour
1/2 tsp salt
Cookies & Cream Filling:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 tbsp ground cinnamon
1 cup crushed Oreo cookies
Cream Cheese Glaze:
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 tsp vanilla extract
2-3 tbsp milk
1/2 cup crushed Oreo cookies for garnish
Directions:
Prepare the Dough:
In a small bowl, dissolve the yeast in the warm milk and let it sit for about 5 minutes until frothy.
In a large bowl, beat together the softened butter and granulated sugar until creamy. Add the eggs and vanilla extract, mixing well.
Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until doubled in size.
Prepare the Filling:
In a medium bowl, mix together the softened butter, granulated sugar, brown sugar, and ground cinnamon until smooth.
Gently fold in the crushed Oreo cookies.
Assemble the Cinnamon Rolls:
Once the dough has risen, roll it out on a lightly floured surface into a large rectangle, about 1/4 inch thick.
Spread the cookies & cream filling evenly over the dough.
Starting from the long edge, tightly roll up the dough into a log and cut it into 12 even slices.
Place the rolls in a greased 9x13-inch baking dish, cover, and let them rise for another 30 minutes.
Bake the Cinnamon Rolls:
Preheat the oven to 350ยฐF (175ยฐC).
Bake the rolls for 25-30 minutes, or until golden brown.
Make the Cream Cheese Glaze:
In a medium bowl, beat together the softened cream cheese and butter until smooth.
Gradually add the powdered sugar, vanilla extract, and milk, mixing until smooth and creamy.
Drizzle the glaze over the warm cinnamon rolls and sprinkle with additional crushed Oreo cookies for garnish.

* 2 hard-boiled eggs, quartered
* 1/4 cup grated cheese (e.g., cheddar, Swiss)
* 2 tablespoons mayonnaise
* 1 tablespoon Dijon mustard
* 1 tablespoon lemon juice
* Salt and pepper to taste
Instructions:
* Combine ingredients: In a large bowl, combine the tuna, lettuce, tomatoes, cucumbers, corn, hard-boiled eggs, and grated cheese.

Christmas Salad
Ingredients:

* 3 tablespoons Dijon mustard
* 3 tablespoons honey
* 1 large lime juice freshly squeezed
* 6 oz baby spinach
* 1 cup pecan halves toasted, some of them chopped finely
* ยฝ cup dried cranberries
* 3 mandarin oranges peeled and segmented

cup goat cheese crumbled
* โ
cup pomegranate arils or more
Instructions:
* Combine all salad dressing ingredients in a mason jar. Whisk well with a fork, until emulsified. Add more lime juice to taste.
* I prefer to arrange the salad in individual bowls for presentation purposes.
* Add spinach to each individual salad bowl. Top with the remaining salad ingredients.
* Drizzle with the salad dressing.
* Alternatively, you can combine all the salad ingredients (except pecans and pomegranate arils) in a large serving bowl, add the dressing, and toss to combine. Then, top the salad with toasted pecan halves (some of them chopped) and pomegranate arils.

Cajun Shrimp Deviled Eggs
Cajun Shrimp Deviled Eggs
Ingredients:
- 12 large eggs
- 1/2 lb small shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1-2 teaspoons Cajun seasoning (adjust to taste)
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- Paprika, for garnish
- Fresh chives or green onions, chopped (for garnish)
Instructions:
1. Boil the Eggs:
- Place the eggs in a large pot and cover with cold water.
- Bring the water to a boil over medium-high heat. Once boiling, remove the pot from heat, cover, and let the eggs sit for 10-12 minutes.
- Drain the hot water and transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a medium bowl. Set the egg whites aside.
2. Prepare the Shrimp:
- Toss the shrimp with olive oil and Cajun seasoning until well coated.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, or until opaque and cooked through.
- Remove from heat and let cool slightly, then chop the shrimp into small pieces.
3. Make the Filling:
- Mash the egg yolks with a fork until smooth.
- Add the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper. Mix until well combined and creamy.
- Fold in the chopped shrimp, reserving a few pieces for garnish if desired.
4. Fill the Eggs:
- Spoon or pipe the yolk mixture into the cavity of each egg white half.

3. Heat and Stir: Cook over medium heat, stirring frequently, until the mixture begins to boil.
Add Pectin and Baking Soda:

Instructions:

4 boneless chicken breasts
Salt and pepper to taste
1/4 cup flour
2 tablespoons olive oil
1/4 cup chicken broth
1/4 cup lemon juice
1/4 cup heavy cream
1/4 cup butter
2 cloves garlic, minced
1 tablespoon parsley, chopped
INSTRUCTIONS:
Season chicken with salt and pepper, dredge in flour.
Heat olive oil in a skillet over medium heat, cook chicken until golden, 5-7 mins per side.
Remove chicken, add broth, lemon juice, cream, butter, and garlic to the skillet.
Simmer sauce until thickened, about 5 minutes.
Return chicken to skillet, coat with sauce, garnish with parsley.

๐ LAYERED SUMMER FRUIT SALAD ๐
Ingredients:
2 cups of sliced strawberries
2 cups of blueberries
2 cups of raspberries
2 cups of peeled and sliced kiwi
2 cups of peeled and segmented mandarin oranges
2 cups of sliced bananas
2 cups of diced pineapple
2 cups of halved grapes
1/4 cup of fresh mint leaves
1 cup of vanilla yogurt (optional)
1 tablespoon of honey (optional)
Directions:
In a large glass trifle bowl or serving dish, begin by layering the fruit.
Start with a layer of sliced bananas at the bottom.
Add a layer of pineapple, then strawberries, kiwi, blueberries, mandarin oranges, raspberries, and grapes.
Repeat the layers until all the fruit is used, creating a colorful, layered look.
If desired, drizzle honey over the top and add a dollop of vanilla yogurt.
Garnish with fresh mint leaves and a few whole strawberries on top.
Chill in the refrigerator for about 30 minutes before serving to let the flavors meld.
