Pure summer in a bowl: tomatoes, nectarine, corn straight off the cob, cucumber, greens. 🍅🍑🌽🥒
But the real star is the dressing. Basil, garlic, olive oil, apple cider vinegar, lemon - blended smooth, perfectly GREEN, drizzled over everything. A simple salad is not at all simple anymore! 🍃❤️
Herb dressing (makes 6-8 servings, halve it like I did for this batch if you’d like!):
4 dl / 1½ cups chopped fresh herbs (basil, parsley, cilantro, chives - whatever you have)
1 garlic clove
1 dl / ⅓ cup olive oil
0.5 dl / 3 tbsp apple cider vinegar
1 lemon, juice and zest
½ tsp salt
Black pepper
Blend everything until smooth and bright green. Done!
Top salad with your favorite protein - we did grilled shrimp and fresh mozzarella. 🍤

1. Medical degree from Sweden 🇸🇪, dietitian training in the US 🇺🇸 - I was a student for almost 12 years. Worth it!
2. 👧👧👦 Mom of 3 - a medical student, a high schooler and a 6th grader. How did that happen?!
3. 📚 Published 4 cookbooks in Sweden - and currently working on a dressings, dips and sauces book because good sauce changes everything
4. ☕️ Coffee obsessed, candy lover, morning walker and yes - I dance in my kitchen regularly
5.🚪 All the cabinets in my kitchen are constantly open. WHY.
