👨‍🍳𝗥𝗲𝗰𝗶𝗽𝗲 𝗛𝗶𝗴𝗵𝗹𝗶𝗴𝗵𝘁 𝗼𝗳 𝗧𝗵𝗲 𝗪𝗲𝗲𝗸: 𝗕𝘂𝘁𝘁𝗲𝗿𝗻𝘂𝘁 𝗦𝗾𝘂𝗮𝘀𝗵 𝗮𝗻𝗱 𝗪𝗵𝗶𝘁𝗲 𝗕𝗲𝗮𝗻 𝗖𝗵𝗶𝗹𝗶

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 1 tablespoon olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 1 small butternut squash, peeled and diced
• 1 can (15 oz) white beans, drained and rinsed
• 1 can (14.5 oz) diced tomatoes
• 2 cups vegetable broth
• 1 teaspoon cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon ground cinnamon
• Salt and pepper to taste
• Fresh cilantro for garnish

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
2. Stir in diced butternut squash, cumin, smoked paprika, cinnamon, salt, and pepper. 3. Cook for 5 minutes.
4. Add white beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the butternut squash is tender.
5. Serve the chili hot, garnished with fresh cilantro.

👨‍🍳𝗥𝗲𝗰𝗶𝗽𝗲 𝗛𝗶𝗴𝗵𝗹𝗶𝗴𝗵𝘁 𝗼𝗳 𝗧𝗵𝗲 𝗪𝗲𝗲𝗸: 𝗖𝗮𝗿𝗿𝗼𝘁 𝗔𝗽𝗽𝗹𝗲 𝗧𝘂𝗿𝗺𝗲𝗿𝗶𝗰 𝗪𝗲𝗹𝗹𝗻𝗲𝘀𝘀 𝗦𝗵𝗼𝘁

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 5-7 Carrot Stalks (depending on size), roughly chopped
• 1 Apple, roughly chopped (any variety)
• 5 inches of Ginger Root, roughly chopped (start with 2-3 inches if you’re a beginner)
• 2-3 Inches of Turmeric Root (start with ½ - 1 inch if you’re a beginner)
• ¼ tsp Black Peppper
• 1.5 - 2 Cups Water
• Makes about 32oz

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. Blend all in a blender or strain with a nut bag or cheesecloth.
2. Store in 2oz glass bottles for up to 7 days in the fridge or in BPA FREE plastic 2oz freezer safe bottles for up to 30 days.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 4 cups kale, chopped and massaged
• 1 apple, thinly sliced
• 1/4 cup dried cranberries
• 1/4 cup pumpkin seeds
• 1/4 cup crumbled blue cheese or feta

𝗛𝗼𝗻𝗲𝘆 𝗠𝘂𝘀𝘁𝗮𝗿𝗱 𝗩𝗶𝗻𝗮𝗶𝗴𝗿𝗲𝘁𝘁𝗲:
• 2 tablespoons olive oil
• 1 tablespoon apple cider vinegar
• 1 tablespoon honey
• 1 teaspoon Dijon mustard
• Salt and pepper to taste

𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:
1. In a large salad bowl, combine chopped kale, sliced apple, dried cranberries, pumpkin seeds, and cheese.
2. In a small bowl, whisk together the vinaigrette ingredients.
3. Drizzle the vinaigrette over the salad and toss to combine.
4. Serve immediately or refrigerate until ready to eat.
