Chile en Nogada. So much history behind this dish, savory, meaty, fruity, nutty. Poblano pepper stuffed with ground beef, pork, apple, peach, pear, plantain, covered with a fresh walnut sauce made from walnuts de Castilla, for special this weekend. 🇲🇽

In the prehispanic world pinole (pinolli) was a multi versatile product that families used to make cookies, hot beverages or cold beverage such as by mixing this flour made from organic toasted blue corn, cinnamon and piloncillo to ferment and served cold. We use pinole to enhance the flavor of our cheesecake, don’t missed and try it after dinner.
