We are thrilled to announce the official re-grand opening of Power Up Cafe as a vegan food truck! Set for mid-February, our food truck is located at The Columbus Farmers Market, 2919 Rt 206, Columbus, NJ 08022. Get ready to indulge in the most delicious vegan food you’ve ever tasted. Our menu items are made from scratch with love and care, ensuring each bite is bursting with flavor. From mouthwatering burgers to tantalizing b***o banana fries, satisfying tacos, and delectable breakfast options, we have something for everyone. Join us for a culinary adventure that will leave you craving for more!

Yahchana and her partner are a power couple who faced a setback when the building owner chose not to renew their restaurant lease, despite their successful business and positive impact on the community. It was a painful blow, as they had dedicated themselves to serving the neighborhood with wholesome and holistic foods. However, instead of giving up, they found a new path forward. They decided to start their own food truck, determined to continue their mission of healing the community through nourishing meals. Now, less than a year later, they are reopening their business as "Power Up Cafe." Their resilience and unwavering commitment to their vision are an inspiration to all, reminding us that setbacks can be transformed into opportunities for growth and renewal.
