There are a few things that come with being a restaurant owner. One of those things is receiving menu ideas from people. If I had a nickel for every time someone said to me “ do you know what you should make?”, I would be a bitcoin billionaire.

And I enjoy those conversations. I like new ideas and I have a process I go thru every time that occurs.

1. I think about the flavor profile mentioned. If it’s something I’d enjoy eating the item moves onto phase two.

2. I run the numbers to see how much it would cost to produce it. Then I run those numbers thru a pricing formula. If it fits my model, I go to step three. If not, I put it on the list to make for my family at home.

3. I make some for my employees to try….. and sometimes customers that happen to be around when the samples are done. Favorable responses become a special. Less favorable responses turn my family into test subjects until I get it right.

Today’s Special comes from a message I received from a cousin of my wife. If you have it and enjoy it, you have her cousin Perry to thank.

When we just owned a food truck, I had a couple of rules that I followed. Rule number 1 was to participate in any event that Main Street Perry was involved in. They know how to throw a party.

Every year they put on a lemonade stand on the Square event for kids. The first year a couple of young entrepreneurs asked if they could set up outside of our food truck. When we heard they were going to give the money they raised to a backpack drive for kids in need, we said of course. Such things are dear to me, as I would likely have been a recipient of such kindness.

We offered free hot dogs to any kid that set up a lemonade stand. We also donated our profits that day to those kids and their backpack cause. It was a fun day. It was so fun that we did it again the next year.

This year there is a race in Perry and the proceeds from the entrance fee are being donated to said backpack drive.

Pictured below is how we plan to give to the campaign. With your help, it can be very simple.

Stuff your face full of hot dogs and we’ll donate money to the backpack drive.

The Winner? A kid like me that gets a new backpack for the school year.

I suppose the person that stuffs their face with the most hot dogs could also be described as a winner. Their Prize? A free meal every week at the Kumback Lunch for the next 52 weeks.

If Joey Chestnut shows up, maybe we’ll give away two prizes.

On what seemed an ordinary afternoon in Perry, OK, the usual business and conversation filled Kumback Lunch. Eddie Parker and his staff moved through the busy diner as they always had, serving meals to travelers, townsfolk, and those passing through Cherokee Strip country.

Then the front door opened.

A stranger stepped inside, calm and deliberate, one hand resting on the butt of his holstered pistol. The room fell silent as those present recognized the face of one of Oklahoma's most notorious outlaws—Pretty Boy Floyd.

In a steady voice, Floyd asked Eddie to have everyone else leave the diner. Floyd took a seat, glanced over the room, and ordered a house steak.

For a moment, the notorious outlaw was just another hungry customer. He ate his meal, settled his bill, and left behind a generous tip before disappearing down the road.

Whether remembered as outlaw, folk hero, or fugitive, Pretty Boy Floyd left behind many stories across Oklahoma. In Perry, one of those stories begins not with a robbery or a gunfight, but with a steak dinner at Kumback Lunch.

The Kumback Lunch Exhibit, celebrating 100 years of history, is currently on display. Come discover the stories, people, and legends that passed through one of Perry's most treasured landmarks.

French Dip- Shaved Roast Beef and Provolone Cheese served on a New Orleans Style French Roll with a cup of house made Au Jus. It’s pictured below with a side of hand cut fries, but the choice is yours.

The word on the street is the Banana Pudding Cheesecake should become a staple dessert here. Anytime someone has told me it’s their “new favorite” I ask what their old favorite was. It’s been insightful to hear all the favorite flavor profiles.
