Insomnia is not always bad. Two sleepless nights.

I know you’ve made your samoosas already but in case you wanted yet ANOTHER mince filling recipe, here’s my “white” chicken mince filling recipe. 

This is how my mum makes it, we used to cook the onions into the mince initially but cooking out the water took forever, then my mum found this method. You add the chopped onions (not ground) into the mince while it’s hot but not still cooking. It softens the onion and makes the filling lekker. If you don’t like the onion flavour in your mince, you can choose to cook it out. But we love it this way.

This recipe makes mince for approx 7 dozen samoosas. 

1 ladle ghee
1 kg chicken mince
2 cloves garlic, finely chopped/paste
1/2 tsp ginger, finely chopped
1.5 tsp salt, add more to taste
2 tsp crushed jeera (cumin)
1 tsp crushed dhana (coriander) 
3-4 tsp ground green chilli
3-4 onions, chopped into fine pieces
1 large bunch coriander, chopped fine
3-4 spring onions, chopped fine

Heat your ghee and add in your mince with the garlic, ginger and spices, cook for a bit, break up the lumps so that it doesn’t turn into one big patty. Add your green chilli and cook until done, taste for flavour so that you can add any extra spice or salt if needed.

Switch off your stove, add in your chopped onion while the mince is still piping hot. Close with a dish cloth and the lid, let the hot mince do its magic and the onions will soften, the moisture will get absorbed by the dishcloth.

Let it cool completely (or in the fridge if possible), add in the finely chopped coriander and spring onions.

Mix it up and you’re ready to fill your samosas. See my other videos for how to fill a samosa.
