An Apple Chai Entremet for our members to enjoy!
This entremet has a few different components
-A vanilla spiced cider cake on the bottom
-A Chai Latte mousse filled with an apple compote
-Glazed with a salted caramel mirror glaze
I was visiting and had one of the best chai lattes at .kitchen . It gave me the idea to make this entremet and I'm so happy with the way it turned out💖

Making & baking bread has always had a special place in my heart since Breads101 with Chef Miscovich at .
Bread is a sign of new beginnings for me. To put so much love into a product and receive such a great end result is so rewarding. Sourdough can be difficult but what relationship isn't? Making bread brings me back to my happy place & reminds me how much I really do love what I do. I'm grateful everyday to have found my path at a young age & so grateful I love what I do every single day.
This culinary journey has brought some amazing people into my life. Pastry has shown me so much and I can't wait to explore more on my journey. Days can be tough but pastry has always been my comfort & when I'm baking it's my safe place, my anxiety disappears. No matter what happens I'm just forever grateful for being a pastry chef.

Remember "dirt cups" as a kid? Those delicious cups filled with chocolate pudding topped with Oreos & gummy worms? Or is that just a 90s kid thing?
Either way I turned it into a cruffin! This cruffin is filled with 68% chocolate pudding & is topped with Oreos & gummy worms. Hopefully the kids love this!!
