🍤 BBQ-Dusted Shrimp & Diver Scallops served over smoked cheddar corn risotto with charred sweet corn, black pepper apple cider gastrique, crispy shallots, and grilled lemon.

🥑 Blackened Gulf Shrimp & Avocado Corn Salad Blackened gulf shrimp served over a charred sweet corn and avocado salad with cherry tomatoes, cucumber, crispy shallots, fresh cilantro, smoked chipotle lime vinaigrette, and grilled lime.

🥗 Greek Green Bean Salad
Chilled haricots verts, cucumbers, cherry tomatoes, kalamata olives, shaved red onion, and feta cheese, finished with lemon-oregano vinaigrette, extra virgin olive oil, and fresh herbs.

As we wrap up tonight’s dinner service, we want to remind you about breakfast tomorrow morning.

On Sundays, we’re open to the public and always enjoy seeing families and guests joining us at the table. Come spend your morning with us from 9 AM to 12 PM.

We’ve refreshed our breakfast menu and added a few new dishes along with some familiar favorites we think you’ll really enjoy.

This weeks features in addition to our regular menu.

Featured salad this week: smoked cheddar & charred corn salad with romaine and spring greens, crispy bacon, pickled red onion, cherry tomatoes, avocado, crunchy tortilla strips, and a bold chipotle-lime vinaigrette.

Our featured appetizer — seared chicken livers paired with caramelized onions, roasted mushrooms, creamy whipped Boursin, and a rich thyme demi-glace, served with grilled sourdough and crispy shallots.

Featured entrée — wood-smoked jerk chicken served over a coconut sweet potato purée, topped with charred pineapple salsa and fresh green beans, finished with a rich rum demi-glace and crispy fried plantains.

Dinner is on at the historic Cashtown Inn ✨

Join us Wednesday through Saturday from 4–8 PM for an evening of scratch-made specials, seasonal ingredients, and smoky flavors coming straight from our kitchen and smoker.

This week’s limited-time specials include:

• Rosemary Hot-Smoked Salmon Deviled Eggs with crème fraîche, lemon, pickled shallot, crispy capers, and black garlic crème fraîche

• Smoked Prime Rib Burnt Ends — slow-roasted prime rib tips caramelized in a stout demi-glace with grilled smoked cheddar polenta, charred asparagus, and pickled shallot

• Heirloom Tomato & Peach Salad with Whipped Feta featuring ripe heirloom tomatoes, fresh peaches, cucumber, candied pecans, basil oil, aged balsamic, and flaky salt

And for dessert…

🍑 Corn Cake with Whiskey Peach Glaze & Candied Pecans — yellow cake with brown butter and caramelized corn

🍌 Brûléed Plantains with whipped cream cheese, caramel sauce, and candied pecans

Chef has been smoking many of this week’s specials right here at the Inn, and as always, we strive to make as much from scratch as possible.
