TOFU TIPS from Minh: When tofu was popularized in the U.S., Americans expected a firmer, "meatier" texture instead of the silken tofu that's more popular in Asia. That was the beginning of extra firm, or pre-pressed tofu, which keeps its shape on a grill or in a stir fry.
Tofu Tip of the Day: if you want to skip pressing your tofu, just pick up extra firm at the store!
