To all the Chartreuse Bistro Supporters,
(I just sent this message to a dear customer whom I trust and can be open with and felt maybe everyone else would like to understand a bit more of what is happening with Chartreuse and Christopher at this time)
We are not closing….Chris has decided to step away from the restaurant and stop cooking in the kitchen, he is really burnt out and has been leaning this way for a year or so. It’s what is best for him and for the restaurant right now. I decided to continue without him, it’s really important to continue to advocate for green practices, support organic local farms and biodynamic wineries. It was the main reason we opened our doors. The business kind of snowballed into not being sustainable with Chris having to be in the kitchen all the time which isn’t a good idea for any restaurant or any human being. We also needed to make a change with our menu concept, more vegetarian, smaller plates, move out of fine dining and more into a wine bar/cafe menu and vibe. Still all organic and local ingredients 🙂 daily menu
*Chartreuse is not Christopher. Chartreuse is a business we started to offer the community a serious organic dining option. That supports and advocates for non-chemical practices. Continuing this fight is the most important thing we can do. Please respect Christopher’s choice to step away at this time.
CHARTREUSE is the greens from Mattawoman Creek Farm, the oysters from the Eastern Shore, the most delicious tomato from Fritillary Farm, the most mineral driven mouth watering rosé from the Canary Islands
