From Trish: "So we made a commitment: if we couldn't grow it ourselves or buy it locally, humanely treated and sustainably harvested, it wasn't hitting the table." Chef Mark Estee and his restaurant Campo are featured on Ecocentric Blog! "I met Alice Waters about 15 years ago and she asked me where my food came from in Reno and the Lake Tahoe area. I had just finished a long stage at Chez Panisse. I did not know the answers. So I came home and set about finding them. That is how I came to seasonal, sustainable and local principals."
