7-course private dinner for 6 in Odessa tonight! The menu consisted of:
Amuse Bouche: Ahi tuna tartare, crispy rice, spicy mayo, eel sauce
Soup: French onion, sourdough, Gruyère
Salad: Spring greens, pear, strawberries, goat cheese, raspberry poppyseed vinaigrette
Appetizer: Seared sea scallops, sweet corn purée, crispy pancetta
Palate cleanser: lemon strawberry sorbet champagne float
Entree: Herb crusted baked cod, sour cream & chive baked potato, lemon garlic broccolini
Dessert: Strawberry shortcake

Private dinner for 12 on the Cotee river tonight! The 4- course menu consisted of:
Course One – Trio of Appetizers
*Wild Mushroom & Gruyère Tartlets
Flaky puff pastry topped with caramelized onions, sautéed wild mushrooms, melted Gruyère cheese, and fresh thyme.
*Prosciutto, Melon, Mozzarella & Basil Skewers
Fresh melon, marinated mozzarella, basil, and prosciutto finished with a balsamic glaze.
*Whipped Feta & Tomato Crostini
Toasted crostini topped with whipped Italian herb and roasted garlic feta, blistered cherry tomatoes, garlic confit, and balsamic glaze.
Course Two – Artisanal Greens & Local Strawberry Salad
*Spring greens with fresh strawberries, roasted pecans, Parmesan crisps, and house-made raspberry poppyseed vinaigrette.
Course Three – Guest Choice Entrée
*Sous Vide Filet Mignon or
*Pan-Seared Salmon
Served with:
Velvet Yukon Gold Potato Purée
Charred Broccolini & Roasted Wild Mushrooms
Bordelaise Sauce (Filet Mignon)
