This summer, Chef Gaspard’s celebrated Homemade Wagyu Beef Wellington returns to Bleu Provence for six exclusive evenings only.
Crafted with a center-cut Wagyu filet, a fragrant mushroom duxelles of shallots, thyme, garlic, and truffle, flambéed with Pastis in the spirit of Provence, then wrapped in Jambon de Bayonne and hand-rolled butter-rich puff pastry, each Wellington is prepared with precision, patience, and care.
Served with grilled asparagus, lemon-infused olive oil, and our signature morel mushroom sauce.

This Saturday, May 30, Chef Gaspard brings back his celebrated Homemade Wagyu Beef Wellington, a dish shaped by precision, patience, and quiet indulgence.
At its center: a Wagyu filet, seared to a deep mahogany crust.
Then comes a fragrant mushroom duxelles with shallots, thyme, garlic, and truffle, delicately flambéed with Pastis in the spirit of Provence.
Wrapped in Jambon de Bayonne and hand-rolled in butter-rich puff pastry, it is baked until beautifully golden and served with grilled asparagus, lemon-infused olive oil, and our silken morel mushroom sauce.
