Hey! Are you one of those folks afraid of not getting enough protein if you eat a plant based or vegan diet?
This tasty snack is high in nutrients, fiber, healthy fat AND packs about 14 grams of protein. It also eats like a meal and only takes 2 minutes to prepare. This is clean, green, and makes you feel like a fabulous machine!
Check this high protein snack out:
2 cups kale
1/2 cup lentils
1 small avocado
Sprinkle of vegan cheese
Spices of your choice
Stir fry kale in a tablespoon of coconut oil, add precooked lentils (I make extra lentils one or two nights/week), add a small sprinkle of cheese (I use vegan, non soy), and throw in chopped avocado..
Add your spices. I use a dash of salt, pepper, cayenne, and cumin.
Eat up!

WHY NOT? Throw some greens into the mix! Loaded with minerals, vitamins, protein, and fiber, this lovely pound of greens was sautéed with a tablespoon of coconut oil. You may season them as desired and eat as a side dish or toss them into your main meal. Feel amazing!

It's a Wrap!! Creating simple wraps with veggies, legumes, and spices makes a sandwich into a hearty, quick, nutritious meal. My whole family enjoyed this tasty dinner. Add a simple green salad and you are done!
