Over the last 15 years the demand for de-alcoholization has grown dramatically in the wine industry. Initially used to avoid higher taxation, de-alc technology is now widely employed to restart stuck fermentations as well as to correct "out-of-balance" wines in an effort to improve wine quality. Wineries of all sizes and from every region of California are quietly embracing alcohol adjustment as an effective "wine tuning" solution.
