The weird 2016 sugaring season comes to a close for us this week. Not a great yield year but not our worst by far. Last boil tonight and the onto filter & bottling. The work never ends.

Mid season report: Incinsistant weather has made for sporadic flows. Sugar content of the sap is a bit lower too, just means you need to boil more sap. However, the syrup flavor is outstanding!! We are making a lot of dark strong flavor. Last nights hard freeze will help reset the trees, should be some good runs of sap over the next 4 days. You can't tell if it is a good season until it is over. We will have syrup filtered, bottled & available shortly.

Trees are thawing out and starting to flow. The temps look promising over the next week. Should be boiling & making syrup this weekend for sure. Sweet!

The great 2016 debate ... To tap or not to tap?!... Many tapped 2 weeks ago & many are waiting. Couldnt resist any longer, so I started tapping today. 2nd earliest on record. You get a sense that the planet is a bit off if you are a farmer/sugarmaker. Let's hope Mother Nature cooperates.

Super busy week with good sap runs. Season is shaping up well. Hoping for a few more cold nights. We still have 600+ gallons of sap to boil!

First boil of this late 2015 season last night.... Approximatly 150 gallons of sap boiled down. Made some very light, super tasting syrup.

100+ taps in this week... Making progress in the snow. Season is finally underway, we will be making syrup this week!

The season is just about here... We dug out the sugar shack & put a few test taps in yesterday (no sap running yet). The 2 feet of snow still on the ground is going to make getting from tree to tree VERY challenging. The temps this week look like a perfect start though... Come on spring!
