I am obsessed with pickling wild foods and even some random veggies like these beet stems!
I had left over pickling liquid after doing 2 half pints of ramp pickles so I chopped up some beet stems.
Why? They are crunchy and delicious and why not?! Plus it makes a pretty pink liquid.
I prepare and preserve wild food for my family and for students to try different dishes during wild Weedy walks and classes.
So maybe you will be one that gets to taste these.
Red Clover is popping up all over the farm in various places!
Many people mix up red clover with crimson clover.
Red Clover is PINK. Trifolium pratense.
Crimson Clovepretense. Trifolium incarnatum.
You can eat both but Red Clover is medicinal for the lymphatic system, colds, sore throats and more.
