Overnight oats 05/02/2019

Warmer months are here. It’s gotten into the 80’s this week in Louisiana, and I’ve starting craving all the tastes of summer — peaches, blueberries, basil, homegrown tomatoes...

This time of year, I like to swap out warm bowls of oats for cool, creamy overnight oats. The ingredients come together in the same amount of time it takes to slice a peach, but if you don’t have any ripe stone fruits around yet, use any fruit on hand.

This morning’s combo was blueberries + banana + almond butter. I’m holding out for the first bite of a juicy Ruston peach next month at the Peach Festival. In the meantime, our thoughts and prayers are with the people and city of Ruston as they recover from last week’s tornado
