Today on International Women’s Day, I want to celebrate three incredible women in my life — my wife and my daughters — who continue to inspire me every day.

Kathryn Inouye is an amazing mother of two, a snowboarder, mountain biker, and windsurfer. Together, we opened Hill House Deli and Nehalem Dock from 1996 to 2005, and she also helped open IPS Skate & Snow Shop in Hood River. Kathryn has always been strong, adventurous, hardworking, and full of heart.

My daughter Aspen Inouye continues that same spirit as the Brand Manager for Set & Stone in San Diego. She is a surfer and snowboarder, and as a competitive snowboarder in high school, she took 2nd place at the OISA State Championship for Hood River High School. Aspen brings creativity, drive, and passion to everything she does.

My youngest daughter Autumn Inouye is the Clinic Director at Range Sports Therapy and holds a Bachelor’s degree in Kinesiology and Exercise Science. She is a snowboarder and skateboarder who made her mark early, winning the OISA Halfpipe State Championship as a freshman and later winning the halfpipe at the USASA National Championships. Autumn is dedicated, accomplished, and always pushing forward.

I’m beyond proud of these women — their strength, talent, work ethic, and adventurous spirit.
They have helped build businesses, lead in their careers, and inspire the people around them every single day.

Happy International Women’s Day to Kathryn, Aspen, and Autumn. I love you and I’m proud of you always.

🍍🥥 Pineapple Ginger Stuffed Baked French Toast

For the Bake:
• 1 (12-pack) King’s Hawaiian Sweet Rolls, cubed (about 6 cups), staled overnight or up to 3 days
• 8 oz fresh pineapple, chopped (about 1 cup)
• 2 tablespoons fresh ginger, finely chopped
• 8 oz orange ricotta (see recipe below)

Custard Mixture:
• 4 large eggs
• 1 cup whole milk
• ½ can (about 7 oz) coconut milk
• ⅓ cup honey or maple syrup

To Finish:
• Butter, for greasing the pan
• Pineapple Orange Ginger Syrup (see recipe below)
• Toasted coconut, for garnish 



🧀 Small-Batch Ricotta Cheese (Yields approx. 1–1½ cups)

Ingredients:
• 4 cups whole milk
• 1⅓ cups heavy cream
• 1 tablespoon + 1 teaspoon kosher salt
• 3 tablespoons distilled white vinegar 



🍊 Orange Ricotta

Ingredients:
• 1½ cups fresh ricotta cheese
• 1 tablespoon fresh orange zest
• 2–3 tablespoons fresh orange juice (strained)
• Pinch of salt
• Optional: ¼ teaspoon vanilla extract or a pinch of cinnamon



🍍 Pineapple Orange Ginger Syrup

Ingredients:
• 12 oz fresh pineapple, chopped (about 2 cups)
• ¾ cup fresh orange juice (from 2–3 oranges)
• 1 tablespoon orange zest
• 1 tablespoon fresh ginger, finely grated
• ⅓ cup sugar – or ¼ cup honey (adjust to taste)
• ½ teaspoon cornstarch (for slight thickening)
• 1 tablespoon cold water (to mix with cornstarch)
• Pinch of salt
• 2 to 3 tablespoon of Wallys Pepper Sauce Pineapple Orange Habanero
