My top reason for eating a plant based diet, or I guess my version is "plant centric" is to avoid traditional doctors and our insanely messed up medical insurance system.
It's the one thing I can control! Eating plant centric is my insurance! .

Fresh figs are in their "second or new wood"season. This dish of figs, walnuts, rosemary and honey packs a nutritional powerhouse of omega 3, antioxidants and minerals including potassium, calcium, magnesium and iron. So easy to make. Slice, bake for 20 min at 350... Enjoy.

Beets, raspberries, and strawberries are feeding me full of antioxidants and helping to reduce inflammation. Somethings going on to cause a small rash on my hand, so it's back to the basics cleaning out the diet to see what my body is telling me. Clearly there is something it doesn't like. So I'll peel away the triggers for a few weeks and see what happens. Food heals, your body knows, we just need to listen.

My version of fast food, plus cleaning out my fridge. Blender soup is a breeze, so easy, so fast and so nutritious!
Roasted carrots, broccoli, onion, garlic, rosemary and cauliflower with a hint of cayenne keep me fueled all afternoon.
From oven to blender in 20 min. Hands on time, 3 min. Fast food!
