A lot of people have reached out asking what i think about michelin coming to Milwaukee. I think about Ardent — 41 ⭐️ over 8 years, bibs not even counted. It was already here. We just weren’t loud about it.
A note on Michelin — and why I think it matters for our community to understand.
The Michelin Guide operating in the USA is not the same institution that shaped the culinary world elsewhere. Like the Beards and other “award” organizations, it is a business — and access to that recognition often comes at a price.
I say this from the inside. Ardent welcomed more Michelin-recognized chefs through its doors than any other restaurant in Wisconsin’s history across its 13 years. We cooked alongside them, learned from them, were changed by them. And what I can tell you is that most people don’t fully grasp what it actually costs to operate at 1-star, 2-star, 3-star, or even Bib Gourmand level — financially, operationally, in service standards, in beverage programs, in the human toll on everyone in the building. Those costs don’t stay in the kitchen. They land on the menu, in the price of a seat, in the accessibility of the experience itself. Pursuing this kind of recognition means pricing out a portion of the very community you’re meant to serve. If you want to understand the internal cost, read The Perfectionist.
I was personally embedded in the Beard system for years. I’ve worked at the Michelin level. These achievements, for most people chasing them — including me — come at an enormous personal cost. And honestly? I’m still not sure Ardent was ever truly 1-star ready. That’s not false modesty. That’s the standard.
What I hope for Milwaukee is this: that our community becomes better diners. That we invest our curiosity and our dollars in understanding the craft and culture of hospitality rather than feeding systems that profit off an industry already crumbling under its own weight. These are not true awards — they are business decisions made by companies making money off people who have given everything.
Put those investments back into your restaurateurs. Come to the table with curiosity, not a checklist.

“While I’m happy for Chef and the next chapter in his career, I’m sad that my favorite dining experience in Milwaukee is coming to an end. Justin and the many talented chefs that worked at over the 11-year run constantly created beautiful and delicious, outside-the-box dishes that provided a unique experience and challenged diners to open our minds, and they did it without the use of open flame. I’m grateful that l had a chance for one more tasting menu experience and my third and final visit to Ardent this week! Thank you to my friend, Bridget for joining me, and thank you to Chef Justin, Chef .heard and Joe for another amazing experience last night. I look forward for eating Chef Vanessa Rose’s food at her .mke pop-up soon, and I look forward to sharing a bite or beer with Justin, now that he has a little extra time available.”
