These falafel bowls with lemon rice, onion & peppers, pita, feta, and tzatziki sauce look great BUT before they’re added to the menu in Milpitas Unified School District, they go through several rounds of testing, first with foodservice staff and leadership and then student focus groups.
Testing is an essential part of school foodservice to ensure that a dish that sounds great on paper makes sense in practice and is properly tailored to the kitchen in which it’s being prepared and the tastes of the students who will be enjoying it.

Meeting kids where they’re at is the name of the game!
In Fayette County, WV Schools, Oak Hill High School has historically had low school lunch participation.
However, the foodservice team and Chef Maggie are changing that, one chicken Caesar salad wrap at a time!
They recently introduced wraps and entree salads which kids are crushing! Last week, they served a record of 188 wraps in one day, which is no small feat. Let’s go!

Check out these ADORABLE fruit waffle cones in Lynchburg City Schools!
The foodservice team is planning more “treat days” this year to boost student participation but also just to have more fun! :)
These cones were made with a simple fruit salad, a dollop of whipped cream, and a waffle cone.
Students absolutely loved them — even when they found out they didn’t actually contain ice cream. Some couldn’t even hold their excitement and snuck a taste while in line!
