Top Superfoods for 2014 What are nutrition experts stocking up on for the New Year? We surveyed a group of them to find out.

We had a group of 3rd grade students, teachers and parents from St. John Neumann Elementary in for a G.R.O.W. Your Lunch event last week. Chef (and Education Director) Thi fed them lettuce wraps featuring grilled lemongrass chicken topped with rice noodles, our organic baby Asian greens, our organic microgreens, diced organic carrots and finished off with nuoc mam, which is a blend of fish sauce, crushed garlic, sugar, fresh squeezed lime juice and a Thai chili for a bit of fire. It was a big hit!

Before harvesting we bring unharvested trays into the harvest cooler and dry them out overnight before the next day's scheduled harvest. In the past we've used a large number of dehumidifiers staged along the perimeter of the cooler, but the extracted water was neither potable nor re-usable for irrigation purposes. The Skywater 300 filters the water so it's both drinkable and at the correct ph for irrigation.

Here's a pic of the drink cooler outside for the farm workers that's fed by a reserve tank connected to this machine and we'll be connecting the reserve tank to our irrigation system next week. Bye-bye city water, hello sustainability!

We also had a vegetarian/gluten-free option, which was a deletion of the bread and salmon, and it tasted great!

On the cutting board is the beginning of the makings of samples of a 'BMT', bacon, microgreens and tomato. :)
