叉烧 (Char Siu) by , who always brings the heat at every , this one being November 2022. To prep the pork, marinate it in sweet BBQ sauce, roast it, then hanging on display to be broiled in presentation to festival goers, and finally plated over fresh greens and nuts is a labor of love. Often times, vendors flex dishes they really want to have fun with, a kind of temporary test kitchen offering they may or may not consider putting permanently on the menu. And that’s the beauty of it, right? Satisfying a desire to offer something one time, for the fun of it, to express the creativity of the team, but not commit to it. Plus, when else can you have the actual chef serving you your food and being open to talking about it if the line isn’t long? Food events are special. ✊🏽
