ADHD can be a real kick in the nuts, most the time. Having a kitchen state of mind at all times and mixing that together equals I still couldn't get over how much better I know I can do with making a delicious Danish.
Granted it was my first ever go at it last night and my taste testers basically creamed their pants eating it, but it needed to be more photogenic.
24 hours later, I have done just that.
I made Asada Tacos with onions and cilantro.
I made homemade tortillas that hit the spot on this cold rainy day.
And I made my #1 person a better Strawberry and Cream Cheese Danish for dessert.
I learned a technique to make the straps easy to cut and fold back over. I learned that less is more with my fillings.
*You can see the straps are fu***ng perfect this time.
*There is no spillage of filling.
*Dough is light, flaky and buttery
*The bottom is a sexy AF crispy brown.
*That bulge.. its the sliced strawberries i put inside.

Sometimes, as a dad, cook, and an avid shopper, it confuses me why people still buy tortillas at the store. Sure, I get the convenience, but with additives and preservatives they are becoming less healthy for us.
There are only 4 ingredients (5 if you include the water) and you should literally have all these in your house already.
You can go from dough to plate in 30 minutes.
You can prep the dough ahead, which literally takes only 10 minutes. Or cook them off and freeze them for when you need them. You control the size. Burritos, tacos, flautas, quesadillas or whatever else you may need a flour tortilla for... you are in control.

I present my first ever French Pastry Danish.
I used my homemade pastry puff (Holy s**t is it good. So buttery and flaky. Think of a buttery croissant and thats what I got). 🤘
I made my own strawberry puree and made it firm.
I made my own cream cheese spread.
The straps need to be a bit longer so to reach the back, but please believe me when I say...
This strawberry and cream Danish (dusted in powdered sugar)... is a FU***NG banger!
I wake up thinking about what I can wrap in this dough so much, I ran out.
