When you’re back to baking mode and finishing at @5:30 in the morning, my “students” have lots of choices for “baon” or after-school snacks (pandesal, ube bread, cheese bread, pinoy donut, bread pudding, mamon (ube, vanilla, coffee), and my version of snickerdoodle cookies 🍪 🥰🍞😅

Most Filipinos love "Suman". Suman is made of sweet rice or cassava wrapped with banana or coconut leaves, steamed or fried. May be eaten with coconut jam or sprinkled plainly with sugar. Love it with coffee, tea, or hot chocolate. Perfect for breakfast or snack. Yum yum...

Have you tried "Sapin Sapin?" The word means layered. This festive chewy and flavorful native cake usually has three layers of different flavors (ube or purple yam), langka (jackfruit) and macapuno (young coconut), topped with latik (toasted coconut cream) or budbud( toasted grated coconut). Yummy!!!

This is "Buko pie" or coconut pie. A very popular pie in provinces where coconut is abundant. Buko pie has sweet cream and coconut meat filling inside a flaky buttery crust, may be eaten warm or cold. Perfect dessert and pasalubong (gift).

This is "Biko". A popular kakanin (from the word kanin or rice) from rice-producing regions in the Philippines. Biko is a native rice cake made of glutinous rice, coconut milk and brown sugar topped with latik (toasted coconut cream). Usually served as dessert or snack.
