PORTOBELLO 🍄 MUSHROOMS 🍄 . 2 weeks ago, I was on a team to prepare an outdoor dinner for 125 people on 🏝Catalina Island 🏝. I was in charge of the one of the Veggie side dishes, these fabulous Portobellos. . A super easy option for any size crowd, it is a terrific choice for the non-meat vegetarians in the group. . 1. Pour 1 cup of Olive 🫒 Oil into a mixing bowl. Add 1 cup of Parmegiano Cheese (or 'Parmesan cheese,' recognizing that there is really no 's' in the Italian word), stir with a fork. Keep adding more cheese until it becomes thick and pasty. 2. Mix in 2 tbsp each of finely chopped Basil & Parsley (not dried), finely diced onions, and just a pinch of cracked Red Peppers to give it a hint of a kick. **Don't add salt, as the cheese is plenty Salty all by itself! (Oh those Parma people!) 3. Spoon your mixture to fill the mushrooms. 4. Cover with foil, and throw it on the grille. OR, don't cover it, if you prefer using the oven at a pre-heated 350-degrees for 12-15 mins. 5.
