Resep Classic Mocha Cake
Bahan A:
18 kuning telur dan 6 putih telur
200 gr gula castor
1sdm cake emulsifier/optional
Bahan B:
150g terigu protein rendah
25g maizena
25g susu bubuk
Bahan C:
150g butter
75g blueband margarine
Pasta mocha secukupnya
1. Siapkan 3 buah loyang petak 24cm, oles margarin dan alasi dengan baking paper.
2. Kocok bahan A sampai mengembang, kental dan berjejak.
Masukkan bahan B yang sudah diayak. Aduk balik dengan spatula / mixer sebentar dengan speed rendah cukup sampai rata.
3. Tambahkan bahan C, aduk balik sampai tercampur rata.
4. Bagi rata ke dalam 3 loyang. Oven De Noir settingan api atas 160c, api bawah 180c 16-18 menit.
5. Setelah matang, langsung keluarkan dr loyang dan dinginkan dirak kawat.
6. Pada saat penyusunan, oles selembar cake dengan bahan semprot kemudian beri buttercream mocha, ulangi setiap lapisnya. Hias sesuai selera.
Semprot / oles disetiap lembar cake:
- 30g kopi espresso sesuai selera yang sudah diseduh
- 3 sdm kahlua (opsional)
Buttercream Mocha dan coklat meses secukupnya.
