Meal Prep Monday: Grilled Shrimp Taco Bowls 🌮🍤
Ingredients (3–4 servings)
- 1 lb raw shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt + pepper
- Juice of 1 lime
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
Toppings
- 1 cup black beans (rinsed and drained)
- 1 cup corn (fresh, canned, or roasted)
- 1–2 avocados, sliced or diced
- 1 cup cherry tomatoes, halved
- Shredded lettuce or cabbage
- Fresh cilantro
- Lime wedges
Optional sauce
- Greek yogurt or light sour cream
- Lime juice + pinch of salt
- Hot sauce or chipotle drizzle
Instructions
1. Marinate shrimp
2. Toss shrimp with olive oil, spices, and lime juice. Let sit 10–15 minutes.
3. Cook shrimp
4. Grill or sauté over medium-high heat for 2–3 minutes per side, until pink and cooked through. Don’t overcook.
5. Prep base
6. Divide rice (or greens) into meal prep containers.
7. Assemble bowls
8. Add black beans, corn, tomatoes, and cabbage over the base.
9. Top with shrimp + extras
10. Add shrimp, avocado, cilantro, and lime.
11. Finish with sauce (optional)
12. Drizzle just before eating.
