This is the best and easiest carrot cake ever. Carrot cake is one of my favorite cakes. I was introduced to carrot cake when I first came to Canada as it’s really uncommon to make cakes out of carrots/zucchini/bananas in Bulgaria (my dad always gives me a weird look when I make them), but immediately fell in love when he tasted them. Making cakes out of veggies has been one of the biggest loves of my life and these are the type of recipes I lean to when I want a delicious dessert with coffee. This cake is so simple and requires minimal effort. If you can mix a few ingredients in a bowl, you are capable of making carrot cake!

Carrot Cake:
2 large eggs
½ cup granulated sugar (110 grams)
1 teaspoon pure vanilla extract or vanilla bean paste (5 ml)
½ cup milk (100 ml)
½ cup avocado oil or any neutral oil (100ml)
2 large grated carrots (170 grams)
1 + ⅓ cup all-purpose flour (180 grams)
2.5 teaspoons baking powder (11 grams)
2 teaspoons ground cinnamon to taste (5 grams)
⅛ teaspoon ground nutmeg optional
1/2-1 cup whole walnuts to taste (crushed when adding in) optional

Cream Cheese Icing:
½ cup softened cream cheese (4 oz)
¼ cup softened butter (60g)
½ teaspoon pure vanilla extract
1 cup powdered sugar (120g)

Homemade crullers put store-bought to shame! These doughnuts are surprisingly easy to make at home...maybe a little TOO easy, if you know what I mean. 😉 (Doughnuts for every meal? Don't mind if I do.)

🍩RECIPE:🍩
For the doughnuts: 
1 cup water
2.6 oz unsalted butter, (⅓ cup)
1.3 oz granulated sugar, (3 TBSP)
4.5 oz all-purpose flour,  (1 cup)
 3 large eggs, at room temperature
1 tsp vanilla extract
 2 cups oil, for frying

For the glaze:
2 oz cream cheese, at room temperature
1 TBSP milk
1 tsp vanilla extract
4 oz powdered sugar, (1 cup)

Combine the water, butter, and granulated sugar in a medium saucepan over medium-high heat, and bring it to a boil. Once boiling, add the flour and cook, stirring constantly, for 1 minute, or until the mixture starts to pull away from the sides of the pan.

Remove the pan from the heat. Add the eggs one at a time and beat them into the batter using a hand-held mixer. Once the eggs are blended, add 1 tsp vanilla extract. 

Spoon the dough into a piping bag fitted with a large star tip. Heat the oil to 350 F in a saucepan with tall sides.

Pipe a 3-inch ring of dough on top of a thin metal spatula. Carefully flip the doughnut into the oil. Cook them in  small batches (4-5 at a time) so the pan isn’t overcrowded. Cook them 3-4 minutes on each side until they’re dark golden brown on both sides. 

Remove the cooked doughnuts from the oil with a spatula and let them cool for 5 minutes before dipping in glaze.

Add the glaze:
Beat together cream cheese, milk and 1 tsp vanilla in a medium bowl until blended. Add the powdered sugar and mix well. Dip the tops of the doughnuts in the glaze. You can add additional toppings, like toasted coconut, nuts, sprinkles, or anything else you’d like!

The Stone

The best way I can describe grieving over a loved one as the years go by is to say it’s similar to carrying a stone in your pocket.

When you walk, the stone brushes against your skin. You feel it. You always feel it. But depending on the way you stand or the way your body moves, the smooth edges might barely graze your body.

Sometimes you lean the wrong way or you turn too quickly and a sharp edge pokes you. Your eyes water and you rub your wound but you have to keep going because not everyone knows about your stone or if they do, they don’t realize it can still bring this much pain.

There are days you are simply happy now, smiling comes easy and you laugh without thinking. You slap your leg during that laughter and you feel your stone and aren’t sure whether you should be laughing still. The stone still hurts.

Once in a while you can’t take your hand off that stone. You run it over your fingers and roll it in your palm and are so preoccupied by it’s weight, you forget things like your car keys and home address. You try to leave it alone but you just can’t. You want to take a nap but it’s been so many years since you’ve called in “sad” you’re not sure anyone would understand anymore or if they ever did.

But most days you can take your hand in and out of your pocket, feel your stone and even smile at its unwavering presence. You’ve accepted this stone as your own, crossing your hands over it, saying “mine” as children do.

You rest more peacefully than you once did, you’ve learned to move forward the best you can. Some days you want to show the world what a beautiful memory you’re holding. But most days you twirl it through your fingers, smile and look to the sky. You squeeze your hands together and hope you're living in a way that honors the missing piece you carry, until your arms are full again.
