1 C. ππ€π€π ππ wild rice (π£ππ ππ‘ ππ’π π€πππ ππ‘π πππππ€ ππ π¦ππ’ ππππ ππππππ‘ππππ )
2 chicken breasts, diced
1/2 C. butter
1 medium onion, diced
1/2 C. flour
1 stalk celery, diced
3 C. chicken or turkey broth
1 carrot, chopped
2 C. half & half
β’ In large soup kettle, sautΓ© onion, celery and carrot in butter until onion is transparent; reduce heat.
β’ Thoroughly blend in flour and cook 5 minutes, stirring frequently; do not brown.
β’ Using wire whisk, blend in chicken stock. Cook, allowing to thicken slightly. β’ Add half & half, blending well. Add rice, salt, & pepper.
β’ Simmer 20 minutes.
β’ Let cool and store in a well sealed container.
β’ Refrigerate or keep in a cooler until ready to heat over a campfire.
Serves 8 β 10
Note: substitute ham if desired.
