π Caramelized Pineapple Cake

Ingredients
For the caramel:
1 cup of sugar
1/2 cup of water
Pineapple slices (fresh or canned)
For the batter:
3 eggs
1 cup of sugar
1/2 cup of oil
1/2 cup of milk
2 cups of all-purpose flour
1 tablespoon of baking powder
π©βπ³ Instructions
1. Prepare the caramel:
In a saucepan, melt the sugar until golden brown.
Add the water gradually (be careful not to splash!) and stir until a caramel forms.
Pour the caramel into a baking pan (preferably round or rectangular) and spread evenly.
Distribute the pineapple slices over the caramel. Set aside.
2. Make the batter:
Beat the eggs with the sugar until a light cream forms.
Add the oil and milk and mix well.
Gradually add the flour and stir until the batter is smooth.
Finally, add the baking powder and mix gently.
3. Assembly and baking:
Pour the batter over the pineapples in the pan.
Bake in a preheated oven at 180Β°C (350Β°F) for about 35 to 45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
4. Finishing:
Let it cool for about 10 minutes and carefully unmold to avoid losing the caramel.
π½οΈ Extra tip:
If you want it moister, you can drizzle it with pineapple syrup (if using canned pineapple) or make a syrup of sugar and water with a touch of vanilla extract.
