In Manchester New Hampshire, when you talk about efforts to incorporate more local foods, most chefs will direct you to Chef Jeffrey Paige of Cotton Restaurant. When he opened Cotton, using local foods and working with local people who are passionate about their products became, according to Paige, "a lifestyle choice." He became Executive Chef at Canterbury Shaker Village, one of two remaining active Shaker communities left in the world at the time. There, working with the last Shaker sisters, all in their 90's, he developed an appreciation for New England's rich culinary heritage. He developed numerous relationships with farmers, cheesemakers, gristmills, smokehouses, fishermen, etc. from all over the New England states. In 1991, with assistance from Gail McWilliams Jelly, NH Department of Agriculture, he founded the state's first Farm to Restaurant Connection.
Cotton will be closed this Tuesday and open on Sunday for Mother's Day.
COTTON will be closed Sunday June 29th thru Tuesday July 8th for Summer vacation. We will reopen on Wednesday July 9th at 5pm. Have a safe and happy 4th of July!

COTTON will be closing early this evening, October 25th, with our last seating at 6:45pm. Eversource electric company is doing some repairs in the mill yard and our power will be shut off for several hours this evening to allow them too safely complete the repairs. We apologies for any inconvenience.
Absence makes the stomach grow fonder. Cotton will be closed for vacation, repairs and maintenance Sunday, July 3rd through Tuesday, July 12th. We'll reopen for dinner 5:00pm, Wednesday, July 13th. Thank you for your continued support over the past 22 years. Truly appreciate each and every one of you who chooses to join us at Cotton.

Cotton Covid Update. At this time we've decided to continue with just dinner Tuesday to Saturday through the Winter and reopen for lunch in early March. It's still crazy times for restaurants; staffing shortages, food shortages, supply shortages., You name it, there's more than likely a shortage of it and the price has gone through the roof. We're hoping these issues will be better in the Spring.
