Come along as we take the coffee from fresh roasted to 5lb packaging.

This Frankenstein machine does 3 jobs in one. It conveys the coffee up high into a hopper at the same time separating out the chaff into the bag on the right and anything more dense than the coffee is left behind and caught in a basket at the bottom. From there we move to the front of the machine where a scale is programmed to consistently weigh and manually fill our 5lb bags.

Take this 93 unique coffee from Bali and make your morning shine!

Bali Kintamani Natural is sourced from family owned farms located in the Kintamani highlands on the island province of Bali, Indonesia.  Coffee is grown in the volcanic soils of Mount Agung along with citrus trees that provide shade and another source of income.

Coffee production is typically organized around a Subak Abian, which refers to the ecologically sustainable irrigation systems developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity), a philosophy focused on the harmonization between the environment, humans and God.  

The idea of a natural processed coffee was suggested during Royal’s origin trip in 2009 to address an issue of water scarcity.  It was an easy step to drying whole ripe cherry given that raised beds were already used for drying parchment.  The project has been fully implemented and the results have been exceptional.

Los Cantares Estate has an experienced team and onsite infrastructure at the farm to ensure attention to detail during the harvest.

This lot is picked with a keen attention to cherry maturation. The ripe cherries are floated to remove less dense and damaged seeds, and then depulped, fermented, washed and placed on raised beds and turned regularly over a period of 8 to 12 days.

Panama is an origin that constantly makes headlines in the specialty coffee world mostly associated with the renowned Gesha variety. But there are a number of complexities that influence specialty coffee and it would be a mistake to reduce the complexity of this famous growing region to nothing more than plant variety. With this lot from Los Cantares Estate, there is an opportunity to explore the impact of terroir and generations of coffee processing knowledge.

Los Cantares Estate has 125 acres cultivated with coffee, meticulously divided into plots with distinct varieties planted based on landscape and micro-climates, which influence the maturation and ultimate quality of a coffee seed in different ways. Los Cantares Estate also has 50 acres of naturally preserved forest, which is a reflection of the mindful and environmentally balanced approach to farm management.

Blind assessment: Lively, delicate and sweetly floral. Red currant, white peach, cocoa nib, hibiscus and mandarin zest in aroma and cup. Bright, juicy acidity; delicate, silky mouthfeel. The finish is long and refreshing, carrying sweet-tart fruit, florals and cocoa nib into the long.

The bottom line: A graceful washed Pink Bourbon that pairs vibrant red fruit and floral lift with exceptional clarity, lively structure and a lingering, elegant finish.

We are a small team. Process flow and workplace safety are critical for us. We’re also not getting any younger! This crane was put in late 2025 and has been a critical teammate for us. No more lifting and loading heavy coffee sacks.
