Micro bakery opening! Artisan sourdough loaves with organic freshly milled flour!
Freshly milled whole grain loaf: $14, or 2 for $25.
Unbleached white loaf: $10
Made with organic wheat berries freshly milled the same day, King Arthur unbleached flour, reverse osmosis water, and Himalayan salt. I will have a limited supply of fresh loaves every Tuesday and can also make loaves to order. Due to sourdough's natural fermentation process, orders will be ready 2 days after being placed.
Why freshly milled?
The health benefits and flavor. Freshly milling grains can provide 90% of the vitamins, minerals, proteins, carbohydrates, and fats we need! It also tastes far better than standard whole wheat flour that has been on the store shelves for months. Nutrients in flour begin to degrade and go rancid as soon as the grain is broken open, with studies showing around 40% of nutrients are depleted after 24 hours and 95% after 3 days. For every loaf, I mill my own flour the same day. 50% of the flour is a blend of freshly milled organic hard red and white wheat. The other 50% is King Arthur unbleached flour. My family likes this balance of texture and flavor, but you can customize your order to increase or decrease the amount of freshly milled flour for no additional charge.
Why sourdough?
Sourdough has a wonderful taste and texture, unique to other breads. It uses wild yeast, which breaks down the starches and phytic acid, enabling our bodies to digest more of the nutrients and minerals and improve digestion. It is also richer in nutrients such as folate and antioxidants. It can help manage blood sugar levels and due to its lower gluten content, and it's easier to digest for people with gluten intolerance. Sourdough's non-digestible fiber feeds beneficial bacteria in the gut which can improve immune health.
