Traditional oolong picking means selecting 2-3 leaves, by hand. The young bud brings a more intense aroma, while the mature leaves contribute body and depth - creating a complexity you simple can’t get any other way. Hand-picking ensures each leaf is chosen at peak readiness, with care and intention. Machine harvesting can’t do that, it tears and bruises the leaves, causing uncontrolled oxidation before processing even begins.
