Vegan Birria Tacos:

Start by adding one package of dried hibiscus flowers to a mixing bowl .

Add hot water at 180F and let the flowers soak to open up the flowers for 15-20 minutes each time. You’ll do this twice.

During the second time you soak with water you’ll add 2 tbsp apple cider vinegar. Let soak for 15-20 minutes.

Rinse with the third and final time with cold water. Place your hand in the bowl in a circular motion and throughly clean the flowers .

Next make the birria sauce .

Birria Red Sauce Ingredients:

Start by boiling a pot of water add in 4 carrots , 4-6 small bay leaves ,1 large white or brown onion , 6 dry California chile pods , 6 dry Guajillo peppers , 6 cloves of garlic , 2 Tbsp (vegan) chicken bullion

Once all items in your pot are soft add to a blender. Place the bay leaves to the side you’ll use them later . Use the water from the pot in the blender to get a smooth sauce .

Place the sauce back into the pot and turn it on a medium heat . Add in the hibiscus flowers . Place the bay leaves back into the pot with the sauce and the hibiscus. Let it simmer for 20-30 minutes until everything is combined . Personally I think the longer it’s in the sauce the better . Next day the dish is even better than day one ☺️you can store in the fridge or make this large batch and freeze it.

How To Roasted Jalapeno Peppers :
Jalapeno , fresh and washed
1/2 tsp sea salt
1 tsp neutral oil like canola , vegetable or even avocado

1. Start by cleaning of your peppers in cold water .
2. Heat up cast iron skillet or comal once warm add your choice of oil .
3. Add peppers to the skillet roast on low / medium heat rotating it until all sides are browned .
4. Add to storage container for 5-10 minutes so it can trap the heat and this will allow it to sweat .
5.Peel off the peppers skin slice and enjoy !

Vegan Enchiladas W/ Enchiladas Rojas Sauce :

4 medium sweet potatoes
1 medium white onions
1 yellow bell pepper
1 red bell pepper
2 cans 15 oz black beans
corn tortillas
nuetral oil to fry the tortillas

Enchiladas Rojas Sauce:
10 Guajillo Chilies
3 chili arbol
4 garlic cloves
1 tsp sea salt
2 tsp chicken bouillon / veggie
2 tsp Mexican oregano
3 1/2 cups water
1/2 tbsp neutral oil

Sauce recipe is good for about 15-20 enchiladas. Fill with your favorite veggies , beans or cheese .

Grilled Corn Pomegranate Salad :
2 cans sweet yellow corn
2 small purple onions
16 oz cherry tomatoes
1 pomegranate arils
1 lime
1/2 bunch fresh cilantro
1 jalapeno with seeds
1 tsp sea salt

Gardening with a two-year-old is less about cultivating a perfect garden and more about sensory exploration, developing motor skills, and having fun outdoors. The key is to keep activities simple, supervised, and embrace the inevitable mess and “help” that may involve some destruction.

Tips for Success
Designate a “toddler zone”:

Create a specific area, like a small patch of dirt or a few pots, where your toddler can dig freely with child-safe tools without disturbing your delicate plants.

Use child-sized tools: Provide a small, lightweight watering can and appropriate tools, as adult-sized ones can be too heavy and frustrating for tiny hands.

Prioritize fun over perfection: Expect some chaos, like 30 seeds in one hole or a newly planted seedling being pulled out. The goal is to foster a positive association with the garden.

Focus on the process: Activities like planting large seeds, watering, and finding worms are more engaging for a toddler than weeding or meticulous tasks.

Supervise closely: Keep an eye on your child to ensure they don’t put non-edible plants or organic fertilizers in their mouth, and always use child-safe, non-poisonous plants.

Engaging Activities

Watering: This is often a favorite activity for toddlers, who love playing with water. A bucket of water and a small cup is also a great alternative to a hose.

Digging for worms: Toddlers can be fascinated by bugs and worms. Give them a small shovel and a patch of dirt to go on a “worm hunt”.

Planting: Choose large seeds, like peas, beans, or sunflowers, which are easier for small hands to handle.

Harvesting: They can help pick ripe items like cherry tomatoes, snap peas, or strawberries, which offers an immediate reward and a chance to taste the fresh produce.

Sensory play: A simple mud kitchen or sensory bin with dirt, water, and various containers can provide hours of fun and exploration.

Stuffed Poblano Peppers :8-10 poblano peppers roasted 1 lb creamy homemade beans 2 cans sweet corn 2 tbsp avocado oil 4 bell peppers jar or fresh 4 zucchini’s 2 lbs vegan mince 2 packages of taco seasoning Sauce : 4-6 Roma tomato’s small / medium 1 tbsp oregano 4 garlic cloves 2 tbsp chicken bouillon 2 tbsp flour 1 yellow or white onion Poblano Mixture: 1. Start by charring the poblano peppers on a cast iron skillet . Once they are blackened peel back the skin and then slide down the middle so they are ready to be filled with the vegan ground meat and veggies . 2. Grill the veggies first until golden brown then add in salt , pepper and your favorite taco seasoning 3 . Cook vegan ground mince until brown . 4. Place tomatoes inside a deep pot to be able to boil them until the skin comes off . Add in the onion and garlic , oregano and chicken bouillon. 5 . Once everything is nice and soft you blend it up in an immersion blender or stand blender and this will create your sauce . 6. Pour the mixture back into the pot and place the temperature on low and add in the flour slowly this will thicken up the sauce and also add a pinch of oil and continue mixing until it thickens . 7. Plate your sauce first , add the creamy beans first , veggies and then vegan mince meat mixture . Optional but you can also add Spanish creams on yours or even cheese . Roasted Cauliflower: 1 stick butter 3 tbsp taco seasoning 1/2 of fresh lime juice Start by cleaning the cauliflower in the sink remove and damaged leaves . Get a pot of water and fill it up halfway to allow room for the cauliflower to be placed inside . Cook the cauliflower for 10-15 minutes depending on the size . Once it’s soften you add it to a roasting pan or baking sheet lined with silicone . In a separate bowl melt down 1 stick of butter and 3 tbsp your favorite taco seasoning a whisk together . Drizzle the mixture onto the cauliflower and place it in the oven at 410 F for another 15-20 minutes until golden brown . Then place on the broiler for 5 minutes to get it extra crispy . Tomato Sauce : 6 roma tomatoes 60 oz water 6 garlic cloves2 tbsp chicken bouillon 2 tbsp mexican oregano 1 tbsp flour 1 large white or yellow onion canola oil to coat the cast iron skilletStart by adding your water to a deep pot . Clean your tomatoes and then place them inside the water alongside the garlic cloves and onion .Add in the Mexican oregano, chicken bouillon yes there’s a vegan one I have it listed in my Amazon store . Let everything come to a boil once you see the tomatoes skin blistered open then they are ready . Place them into your blender along with some of the water be careful not to add too much water . Blend everything up and set aside . Get a cast iron skillet add a neutral oil this can be canola or vegetable oil . Pour in the sauce into the oil and mix it up on a light boil . Then get your flour add it in slowly and this will thicken the sauce mixture . DO NOT add all at once it will ruin the sauce nice and slow . Pair with your rellenos or stuffed peppers. My kids personally love it with quesadillas to dip as well ! 1 tsp apple cider vinegar
1 1/2 cup all purpose flour
1/2 cup cocoa powder
1 cup sugar
2 tsp baking powder
1/2 tsp sea salt
1 tbsp cornstarch
1/3 cup canola oil
1 tsp vanilla extract
1 1/2 chocolate chips

Here’s some delicious and simple vegan breakfast and brunch ideas for you to enjoy this weekend! Spring is almost here and I’m ready to start getting back in the yard and hosting others.
