My first time making Porkstrami. Made a standard pastrami brine and put a pork butt in it for a week. Cooked it overnight on my pellet grill and let it rest for a few hours this morning. Tastes like super tender corned beef. It’s different than any other pork butt I’ve ever cooked. It’s super soft, but not mushy. It’s more moist and juicy than any pork pot I’ve ever had.

This has become PNRBBQ‘s signature dish, pulled pork nachos with smoked queso. Delicious every time!
