Meet Monique Gaspard chef/owner of Dark Roux Catering Co. Monique is originally from New Orleans, Louisiana. She has been a local chef in Colorado since 2011. When not working with Dark Roux Catering Co. You can find Monique instructing cajun and creole, southern baking, and kids (pizza/ candy making) classes at Journey Culinary in downtown Longmont!
