Red Pepper Pasta 🌶
This authentic Italian dish has a freezer friendly sauce, and it holds a bit of spice alongside creamy and salty.
Ingredients
⏺ 2 red peppers
⏺ 1 sweet yellow onion
⏺ 5 garlic cloves (sliced)
⏺ 1 1/2 cups heavy cream
⏺ 4 Calabrian peppers (remove seeds)
⏺ Olive Oil
⏺ 2 TB tomato paste
⏺ 1/2 cup Pecorino cheese
⏺ small pasta noodles
To Make:
➡️ roast the peppers by broiling in oven (rotating every 5 minutes). After, place in a bowl with plastic wrap for 20 minutes. The trapped heat steams the peppers. Remove skin, and all seeds, slice pepper. Set aside.
➡️ slice the onion and Calabrian peppers. Grate Pecorino cheese.
➡️ over medium/high heat, add a splash of olive oil. Cook the onions until translucent. Add the red peppers. Sprinkle with salt but not too much (the cheese is salty). Add garlic, Calabrian peppers, tomato paste,
and a small dash of red chili flakes (for a bit more spice). Heat for about 4 minutes, then add the cream. Stir until everything is heated. Remove from heat.
➡️ in a blender, blend on high until smooth. Set aside.
➡️ boil pasta. 3 minutes before pasta is at al dente, warm up half the sauce in a pan. It needs to be hot, but not bubbling. Remove pasta from water, and put directly into sauce. Add a splash of pasta water to the sauce.
Turn heat down to medium/low. Continue stirring for 2 minutes.
➡️ remove from heat. Add the cheese. Once combined, finish with a few spoons of the sauce on top and stir. ( Don’t skip this step.)

Microgreens with Easy Egg Salad
Egg Salad Ingredients:
⏺ 5 hard boiled eggs (sliced)
⏺ 1/3 cup chopped red onion
⏺ 3 TB mayo
⏺ 2 TB mustard
⏺ Juice from half a lemon
⏺ Salt and pepper to taste
To Make:
Combine all egg salad ingredients together. Place on toasted bread, and top with Microgreens ( salad mixes, broccoli, or radish would be great here)!

Anti-inflammatory Smoothie
Ingredients:
⏺ 1 frozen banana
⏺ 1/2 cup baby spinach (frozen)
⏺ 1 TB grated ginger
⏺ 1 TB fresh turmeric (grated or whole)
⏺ 1 Tsp Chia Seeds
⏺ 1 Cup oatmilk
To Make:
Blend ingredients together until smooth. For meal prep, freeze all ingredients in a ziplock bag, and add milk when preparing.

Pot Roast Street Tacos 🌮
Ingredients:
⏺ 3-5 pound Chuck Roast
⏺ Colorado Spice Co Taco Seasoning
⏺ Corn Tortillas
⏺ Limes
⏺ Pico Pack
To Make:
Prepare Chuck roast in crock pot. Once cooked, remove, and shred roast. Keep 1/2 cup of stock. Add Taco seasoning spice pack and stock.
Fry corn tortillas, or lightly burn over grill. Decorate with shredded beef, Cotija cheese, lime wedges, pico, etc. 🧅

No Oil Tomato Basil Pasta 🌿
This recipe can be made as-is or vegan. Both recipes available below 🔽
To make:
⏺ 4-6 TB Garlic ( chopped )
⏺ 1 bunch of Basil
⏺ 1 large Shallot ( chopped )
⏺ Juice of 1 lemon
⏺ 1/2 cup sun dried Tomatoes
⏺ 2 cups chopped Asparagus ( stems removed )
⏺ 2 TB Paprika
⏺ 2 cups ABC Homemade Broth
⏺ 1/2 cup half-and-half ( or 1/2 can of unsweetened coconut milk )
⏺ 8 OZ Penne Pasta
To Make:
Heat up broth in skillet. Add asparagus. Cook for 3 minutes. Add shallot and garlic. Cook until garlic is fragrant. Add paprika. Simmer on low. Lid off.
Boil pasta until Al dente ( about 10 minutes ).
Add cream, or coconut milk, to skillet. Combine with cooked pasta. Add basil, sun dried tomatoes, and lemon juice. Salt and pepper to taste.

Wild Cherry H**p Toast 🌼
Lightly toast sourdough bread in oven 350 F
Brown H**p Crumble on the stovetop with olive oil ( 5 min )
Take toast, add Peaceful Rebel Queso Fresco cheese, then Wild Choke Cherry jam.
Finish with H**p Crumble on top

To get the perfect stack: slice the tomatoes thin, put mayo on hot bread, and switch out the iceberg lettuce for spinach 🍅

Caesar salad secret: use less dressing by adding the juice of a squeezed lemon.
This helps spread the dressing without using more, intensifies the flavors in the salad, and takes away that heavy-salad-dressing feeling 🥗

Practice makes perfect with this cauliflower soup 🥣
Recipe:
1 head cauliflower ( chopped )
3 TB 🫒 oil
6 Cloves 🧄
6 Cups broth
1 Chopped yellow 🧅
4 TB soy sauce
1 TB cumin
Bring to a boil, cover, and let simmer until cauliflower can be pierced with a fork, and onions are transparent in color.
Transfer into a blender. Blend until smooth. Put back into pot.
Add 1/2 cup nutritional yeast, and simmer for another 5-10 minutes.
