It’s 6:30 am. What am I doing? Hand gridding 12 dozen English muffins.

This is why my bread has the flavor it has- long cold proof before being baked just before you pick it up. That long fermentation helps eat that gluten, and makes it easier for us to digest. That’s also more than 200 lbs of dough in those refrigerators!
