My dearest Bayleaf friends, It is with mixed feelings that I am closing down Bayleaf Diaspora Kitchen in its current iteration. A new job opportunity as a chef has presented itself and I have decided to embrace it.

It has been lots of fun creating new menu items weekly and I really appreciated all your wonderful feedback and support. I particularly enjoyed providing you with ready-to-heat meals that made your modern chaotic life a little easier, and hopefully a little tastier.

Thank you so much for ordering from me over the past year and helping me make a dream come true. For those of you who regularly ordered from me or may consider a curbside catered event from Bayleaf... stay turned!

We are closing out the month with a very special Weekly Special; a luscious, comforting Beef Bourguignon (Pick up Tues-Fri, 1/25 to 1/28). This French version of the beef stew is phenomenal in its simplicity and depth of flavor. Large cuts of chuck beef is simmered in pinot noir wine, organic beef broth, and herbs until perfectly tender. The sauce is reduced to a mouth-watering glaze before adding sauteed cremini mushrooms, carrots, and caramelized pearl onions to finish this amazing dish. Don't miss out!

On this very wintery week, I am making a special dinner for you made with Mediterranean flavors to warm the soul (pick up 1/18 to 1/21). Grilled juicy pork skewers with lemon, oregano, garlic, and honey is accompanied with crispy Greek lemon potato wedges, pita bread, and house-made tzatziki sauce. And, don't forget about dessert, German chocolate cake!

Happy and prosperous New Year to everyone! We are starting 2022 with something a little on the lite side, the Brazilian Moqueca (pick up 1/11 to 1/14). This comfort meal has red shrimp and Norwegian farm raised salmon simmered in a seafood broth with tomato, roasted red pepper, garlic and extra virgin olive oil. It is served over a coconut milk infused mashed sweet potatoes. It is delish! The dessert of the month is German Chocolate Cake with Pecan Coconut icing (sorry not sorry) 😋

Guess what y'all? This is the last week for us here at the Bayleaf Kitchen until next year. I'll be taking some time off to be with my friends and family and will resume cooking for you on Janurary 11. Thank you soooo much for all of your love and support! One more week of delicious food for 2021. For pick up this week (12/14 through 12/17) I'm preparing a Cornish Hen Dinner for Two. The cornish hen is brined, seared, then basted with shallot-sage butter to create a very moist and juicy bird. Roasted vegetables and dried fruit (parsnip, carrots, poratoes, radish, apricot, and fig) are tossed in a bourbon honey glaze for a sweetness that nicely offsets the savory.

This week's special for pick up this Tues, Thurs, and Fri (12/7, 12/9, and 12/10) is a Malaysian Mixed Seafood Laksa. A triditional coconut curry with mussels, shrimp, squid, and octopus. The broth is flavored with lemongrass, dried chillies, shallot, galangal, and turmeric. Comes with mixed veggies and vermicelli rice noodles😋

In this last week of November and first week of December I think we are all pretty done with fowl. So, back by popular demand, it's the juicy and super flavorful Flat Iron Steak. Served with smoked paprika and maple sweet potatoes, grilled asparagus, and chimichurri. Savory, tangy and sweet...Its all there!

In addition to the steak, the next three weeks I'll also have available the Country Captain Chicken, Grilled Salmon with feijoada on rice, Honey Mustard Beer Cream Pork Tenderloin, and an Orange-White Chocolate Torte for dessert!
