What if disease prevention started long before a patient enters a doctor's office?

This month, our Founder and CEO, Lorena Prieto Mucke, attended FIMCON, where more than 800 leaders from healthcare, research, education, nonprofits, and food systems gathered to explore the growing Food is Medicine movement.

One theme stood out: while many important conversations focus on managing or reversing chronic disease, prevention deserves a larger place in the discussion.

At Educated Choices Program, we believe education is one of the most powerful forms of prevention. By helping students build knowledge, critical-thinking skills, and confidence about food choices, we can empower healthier decisions that may positively impact lives for years to come.

We're grateful to be part of a movement working toward healthier people, healthier communities, and a healthier future.

🐒 Sea turtles have survived for more than 100 million years, but today they face threats unlike any in their history.

50% of marine turtles have ingested plastic or other human rubbish. And the single greatest threat to the survival of many sea turtle populations is incidental capture in fishing gear such as longlines, trawls, and gillnets.

This World Sea Turtle Week and Day, take a moment to learn more about the challenges facing our oceans and the actions we can take to help protect marine life.

We had an amazing time attending Food Health LIVE! Lorena Mucke, CEO, engaged with leaders working across education, public health, and food systems to explore solutions for some of our most pressing challenges.

A particularly impactful session was School Food: Myths, Misunderstandings, Models, & Opportunities with Katie Wilson, Urban School Food Alliance
, which examined how school meal programs can improve health outcomes, support academic success, and strengthen communities by moving beyond common misconceptions and funding myths. Special thank you to the panelists: Spence Medford of The Henry Ford, Alexandra DeSorbo-Quinn of Pilot Light, Katie Wilson of Urban School Food Alliance, and Kris De la Torre of Cultivate Collective.

A theme that stood out throughout the discussion was the importance of connecting what students learn about food with the food environments they experience every day. Education and access work best together.

At Educated Choices Program, we see this connection firsthand. When students are provided with credible, science-based food systems and nutrition education, they are better equipped to make informed decisions that can positively impact their health, their communities, and the environment.

Thank you to the panelists for sharing your expertise and insights. Conversations like these help move the field forward and highlight the opportunities ahead for school food and education.

The Good Food Institute's new Train-the-Trainer program is a free 4-week online course designed for U.S.-based high school STEM educators interested in bringing real-world food innovation into the classroom. The program explores the science behind plant-based, fermentation-derived, and cultivated proteins while connecting topics like biology, chemistry, biotechnology, sustainability, climate, and food security to NGSS-aligned STEM learning.

Participants will:
β€’ Earn 2.0 graduate credits from Adams State University at no cost
β€’ Access classroom-ready lesson plans, labs, and STEM activities
β€’ Learn directly from educators, scientists, and industry leaders
β€’ Explore emerging career pathways in food technology and biotechnology
β€’ Develop a classroom-ready lesson or unit for implementation
