Katerra Exotics produces pasture-raised Premium Texas Bison. Our family has been active in the buffalo industry since 1980. We strive to produce the highest quality Bison possible. We operate two ranches – one west of San Antonio in the Frio Canyon just outside of Leakey, TX. This is where the main production herd is located. There, the bison graze freely on hardy Texas Hill Country grasses. Herd

Recipe
1 lb ground bison
1 yellow onion, diced
1 red onion, diced
2 heirloom tomatoes, diced
1/4 cup jalapeños, sliced
1 cup Mexican cheese, grated
4 T grassfed butter
4 bell peppers, hollowed
Sauté onions, tomatoes, and butter. Add bison and brown. Add cheese, jalapeños, salt & pepper to taste. Fill peppers with contents and bake for 30 minutes at 350.
