Just before the first Kalispell Farmer's Market we did a little drive over to Ft. Benton, MT to pick up some flour from the good folks at Montana Flour and Grains. Mostly a pretty drive... until the blowing snow white out... However, that first market seeing our old and new friends made it all worth while. Thank you, Kalispell!

Second 12 hour shift as Assistant Baker, AND I made dinner. What a great employee! I'd say at least 90% of the bread was not dropped. I hear the faint drum of promotion!!

Her eminence, the Baker, is traveling this week so Breadman (Tim Crist) got to score and bake two Country Whites and two Graniacs. I did a little razzle-dazzle on the scoring, looks like it's back to washing dishes when she returns next week. Also, I might have lost one of the loaves. Anybody smell something burning?

A little trip away from sourdough in the test kitchen this weekend with a lovely pair of brioche loaves. Tight crumb, soft, slightly sweet. My plan was to also photograph the French toast we made out of them this morning, but alas, I gorged on mine and only now realize my misstep - but with a happy, full stomach - side note: Maple Syrup, blueberries, strawberries and a little peanut butter took them to the next level.

A test kitchen success with eight grains plus quinoa and sunflower seeds. A serious contender to replace the popular seeded loaf. This one will definitely go into rotation at some point. What should it be called? The Grainiac? The Overachiever? Let us know. Kalispell Farmer's Market

Throw-back to November 2025 at the bakery, and now looking forward to seeing more white stuff next week while we imagine a coffee with a kouign-amann and the prospect of shoveling snow.
