Foodie Friday:

Sunday is National Ice Cream Sandwich Day. How about an Easy Ice Cream Sandwich Cake?

Ingredients
6 Ice Cream Sandwiches
8 ounces (3 cups) of whipped topping
4-5 crushed Oreo cookies
Instructions
Line an loaf pan with parchment paper, allowing extra to hang over the sides of the pan.
Unwrap 3 of the ice cream sandwiches and cut one in ½. Leave the other 2 whole.
Arrange ice cream sandwiches in bottom of pan.
Top the ice cream sandwiches with ½ the tub of whipped topping and spread to cover completely.
Top with the crushed Oreo cookies.
Unwrap the other 3 ice cream sandwiches and cut one in ½.
Layer the ice cream sandwiches in the same manner on top of the whipped topping. Push down gently.
Top with the remaining whipped topping to cover completely.
Cover with plastic wrap and place in the freezer for at least an hour until firm.
Remove from freezer and lift parchment to remove the cake from the pan.
Using a knife, smooth out the whipped topping and spread it cover any parts that might need a little extra.
Serve and enjoy!

Secure outdoor items like lawn chairs, umbrellas, and such outside of your RV. Many times they can be tightly strapped to the rear of your unit.

RV Maintenance Monday:

If you discover a leak under your RV, move the RV and check again, noting the color and location of the leak in relationship to the RV. Have a certified RV technician at a dealer or service center inspect the vehicle if there is a leak.

Foodie Friday:

Grilled Parmesan Zucchini

Ingredients:
3 zucchini
3 tablespoons butter, softened
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1/2 cup grated Parmesan cheese
Directions:
Preheat grill to medium-high heat and lightly oil the grate.
Cut the zucchini in half crosswise, then slice each half into 3 slices lengthwise, making 6 slices per zucchini.
Mix the butter, garlic, and parsley in a bowl, and spread the mixture on both sides of each zucchini slice. Sprinkle one side of each slice with Parmesan cheese, and place the slices, cheese sides up, crosswise on the preheated grill to keep them from falling through.
Grill the zucchini until the cheese has melted and the slices are cooked through and show grill marks, about 8 minutes.
