This Mango Chile Lime Cobbler is the tropical dessert you’ll be eating for breakfast while sipping TJ’s Vanilla Cardamom Cold Brew Coffee or Matcha Green Tea Latte! #TJsChileLimeContest Ingredients: 1/2 cup all-purpose flour 1/4 cup sugar 1/2 tsp baking powder 1/4 tsp salt 3 TBSP cold butter 2 TBSP boiling water 16 oz package TJ’s Frozen Mango Chunks (thawed) 1 tsp TJ’s Chile Lime Seasoning Blend + more for sprinkling on top 1 scoop TJ’s French Vanilla Super Premium Ice Cream 1 tsp TJ’s Organic Raw Honey Infused with Cardamom 1 tsp TJ’s Unroasted & Unsalted Pistachio Nutmeats, roughly chopped Directions: 1. Preheat oven to 400°F. 2. In a medium bowl, mix flour, sugar, baking powder, and salt. 3. Cut in butter until mixture forms course crumbs. 4. Stir in 2 tablespoons very hot or boiling water and mix until moist dough forms. 5. In an 8-inch iron skillet, heat mango chunks on medium-low until soft, breaking into small pieces. 6. Mix in 1 tsp (or more if desired) chile lime seasoning. 7. Top mango with heaping teaspoons of dough. 8. Place skillet on top of a baking sheet and bake for 25 minutes until dough is golden brown. (If you do not have an iron skillet, bake in 8 x 8“ pan.) 9. Remove from oven and let cool 15-20 minutes before serving. 10. Top with a scoop of ice cream, a drizzle of honey, a sprinkle of chile lime seasoning, and chopped pistachios. Enjoy!
